Summer

We had a great weekend.  The kids swam about three times a day.  

                                          I spent time with my best friend which is always a plus.

 There were tons of relaxing going on.  Yes I did work out.  I went to a class at the gym on Monday morning and it was great.  Then I also treaded water for 20 mins while the kids swam around me.  Felt super good and was a great way to get the heart rate up while still hanging out.

                                                         We ate lots of good summer food.



 And then no 4th of July is complete without a little bit of fireworks that could at any moment blow up in your face... I had to move the kids back a little after this round went off.

                                                                  All in all a great day....
And now back to the grind..

Workout this week
Since I am really going to focus on NOT running... I will be going to Kinetic Edge almost every day.  Also will try to swim and or tread water for at least 30 mins 3 times this week.  I am also going to hit up the stairs in Stillwater at least twice.  Also I am really going to try and eat more salad this week.  The only problem is that I am stuck in a salad rut.  Anyone have any good summer salads that you can share with me??

    It's easy to get burned out on a salad! Have you tried putting strawberries, shredded carrot, pecans and raspberry vinagrette on one?

  2. Heather Try this my roommate and I make this ...its so yummmyy!

    Cilantro Lime SaladDressing
    1/3 cup seasoned rice wine vinegar (we use just rice vinegar)
    1/4 cup lime juice
    1 clove of garlic (i usually use 3)
    2 tsp pureed chipotle chiles in adobo sauce
    2 tbls honey
    1/4 tsp kosher salt
    3/4 cup canola oil
    1 cup cilantro leaves

    ^Blend all this in a blender



    3 ears of corn (i use a steamer bag)
    1 1/4 lb chicken (rotisserie chicken)
    1 1/2 cup plum tomatoes
    1 lb. baby greens
    2 cups Jack cheese
    1/2 cup grilled red pepper
    3/4 cup pepito seeds..

    we cut up a rotisserie chicken, just the white parts, cut up the plum tomatoes

    cut up red pepper and fry it just for like 5 min so its not all raw

    add everything together...except let it cool before you add the cheeese or the cheese will melt

    its really good you should try it and the dressing has a little kick ..nomnomnom

  4. I don't know if you have a Trader Joe's anywhere around, but their cranberry Gorgonzola dressing can add pizzazz to anything.

  5. I love all of the pictures! So beautiful! Check out ohsheglows.com. She's got the best salad recipes! They're vegan, but you could always add meat protein if you wanted!

  6. OMG.  Do I have some salad recipes for you!  One of my favorites is from a restaurant in Santa Monica called 'the Library.'  I don't have the exact ingredients or amounts but just go with it, mmmkay?

    Layer the following on a plate...
    -warm brown rice (or quinoa)
    -warm black beans
    -a little bit of grated cheese
    -greens (spinach or mixed greens work)
    -red onions/tomatoes/fresh corn/cucumbers or whatever other fresh veggies yoh have
    -SALSA!! 
    -sour cream (okay, instead of sour cream I use NF greek yogurt. perfect substitute + protein!)
    -And if you're feeling craaaazy and need some crunch, add a few tortilla chips.

    Mix and eat.  So good. And filing!
